While our cocktail menu is renowned for its creativity, the heart of Miri Mary lies in the magic of Indian cuisine. Our food is crafted with passion and precision by Nirvaan, a rising culinary star from Mumbai, who was flown all the way to the Netherlands to bring authentic Indian flavors to our guests.
Introducing Nirvaan: The culinary visionary behind Miri Mary
Nirvaan arrived in the Netherlands for the first time to help launch Miri Mary, where he worked tirelessly for three months alongside our talented kitchen team. He shared his carefully designed menu and trained the team to execute each dish with precision, ensuring every plate that leaves the kitchen represents the perfect blend of tradition and innovation.
Although he was new to the Netherlands, Nirvaan quickly immersed himself in Dutch culture, even developing a soft spot for the famous bitterballen. However, Nirvaan believes that the Dutch experience could be enriched with a little more of India’s warm hospitality. In Indian culture, the dining table is always big enough for everyone—abundance, togetherness, and inclusiveness are at the heart of every meal. This philosophy is woven into the very essence of Miri Mary.
From passionate home cook to renowned chef: Nirvaan’s journey
Nirvaan’s journey into the culinary world began long before his formal education at the prestigious Culinary Institute of America in New York. At the age of six, Nirvaan discovered his love for food in an unexpected way. When his family hired a new cook who struggled to make dosa (a traditional Indian crepe made from fermented rice and lentil batter), Nirvaan was determined to enjoy his favorite dish. He turned to his grandmother for the recipe and began experimenting in the kitchen.
Tracking fermentation times, refining cooking techniques, and perfecting his craft, Nirvaan soon became the go-to dosa maker in his household. His family quickly crowned him the “Master Chef” of the house, and his passion for cooking grew stronger with every dish. From those early culinary experiences, Nirvaan’s talent blossomed into the world-class expertise he now brings to Miri Mary.
Sundays in India: A Celebration of Food and Togetherness
In India, Sundays are all about food. From breakfast to dinner, meals are prepared and enjoyed together, creating a sense of unity and joy. Nirvaan fondly remembers these family gatherings, where food was not just nourishment but a way to connect. His journey into the culinary world began with a simple yet unforgettable dish—dosa, a traditional Indian crepe made from fermented rice and lentil batter. This first successful dish set him on a path to explore the rich world of Indian cuisine. Of course, not every moment in the kitchen was perfect. Nirvaan’s first attempt at cooking was far from flawless—he once chopped off the tip of his finger while slicing carrots. But as he humorously points out, turmeric, a staple in any Indian kitchen, helped heal the cut.
From Dosa to Aloo Sabzi: The comfort of traditional Indian dishes
While dosa sparked Nirvaan’s passion for cooking, his current favorite dish is aloo sabzi—a simple yet flavorful concoction of boiled potatoes and a blend of spices such as cumin, turmeric, dried chili powder, and sesame seeds. Paired with fresh rotis, this humble dish serves as a comforting reminder of home, not only for Nirvaan but for many Indians who prepare it weekly in their households. The beauty of aloo sabzi lies in its simplicity, yet it carries the warmth and essence of Indian home cooking.
Food and nostalgia: The heart of Indian cuisine
Nirvaan believes that food and nostalgia are inseparable, a sentiment deeply rooted in Indian cuisine. Every dish tells a story, evokes memories, and brings people together. His culinary creations at Miri Mary are infused with this emotional connection to food, elevating traditional dishes to new heights. When asked about his favorite ingredient, Nirvaan’s answer is simple yet profound—butter. The richness and smooth texture it provides allow dishes to reach new levels of flavor and satisfaction. In Indian cooking, ghee (clarified butter) is often used as a base in many recipes, adding depth and complexity to everything from curries to desserts.
Another essential ingredient Nirvaan relies on is cumin. This aromatic spice is typically the first to hit the hot oil in Indian cooking, infusing every dish with its warm, earthy fragrance and setting the stage for a flavorful meal.
