As we look back on the journey that led to the creation of Miri Mary, it’s time to reflect on the sources of inspiration that made this dream a reality. For Foram, the founder of Miri Mary, the inspiration for our restaurant came from an immersive journey to explore the heart of Indian cuisine—and it all began in the bustling markets of Bangalore.
In preparation for opening Miri Mary, Foram took a trip that was not just about sampling dishes, but about experiencing the culture and tradition that shapes Indian food. One of the first stops was a local vegetable market in Bangalore, a daily ritual for many Indians. Here, farmers bring fresh produce, fruits, and flowers, while the air is filled with the sounds of lively negotiations and friendly chatter. It’s a place where life moves at its own rhythm—where the scent of fresh produce mixes with the colors and energy of the surroundings.
As we walked through the market, we also witnessed the important tradition of buying fresh flowers. In India, flowers are often purchased to decorate idols and places of worship for different Gods and Goddesses, symbolizing the reverence and devotion at the heart of everyday life.
Beyond the produce, what caught Foram’s attention was the incredible street food scene in the market. Among the most popular snacks was Papdi Chaat, a delicious mix of crispy wheat crisps, chickpea salad, yogurt, and a variety of chutneys—a tangy, sweet, and spicy treat that offers a perfect balance of flavors. Papdi Chaat became a favorite of Foram, and you’ll find it featured on the menu at Miri Mary, bringing that vibrant street food culture to the heart of Amsterdam.
This experience was more than just a food exploration. It was a deep dive into the culture, the people, and the traditions that inspire the dishes we serve today. At Miri Mary, we aim to bring this vibrant energy, authenticity, and warmth to every dish, so our guests can experience a taste of India in its truest form.
